The team explored the markets around Lantau Island searching for
inspiration and flavours to showcase the local ingredients found here.
These ingredients such as honey, dried shrimp and Lap Cheong sausage
are key components of the cocktails in this section.

Having hiked to Tai O with the team, we found that half way through the hike there are locals drying the hibiscus flowers that they grow on their property which they then make into the famous hibiscus tea. Our team got inspired by this refreshing delight while half way through the hike and wanted to come up with a twisted alcoholic version. This drink was our mixologist Lloyd his entry drink for the World Class Cocktail Competition.

Our Zero Proof section is a unique way of taking cocktails that classically
were served with alcohol, but using modern techniques to reproduce
the spirits without the alcohol inside.
